Baked Egg

Every week, my mum and I swim in the river with some friends, without wetsuits. This is great fun, but some mornings we get back feeling rather cold even after a run and, quite frankly, in need of a warming breakfast. This arrives much of the time perfectly in the form of a baked egg, which is rich, warming and satisfying. It also doesn't take too long! Serves 2

Ingredients (approximate):

  • 2 eggs
  • 10-15g butter
  • 2-3tsp cream
  • Salt and black pepper
  • Toast and butter to serve (optional)

Method:

1. Ensure you have a hot oven (180-200 degrees celsius) and 2 ramekin dishes, or something similar

 

2. Melt a little butter into each ramekin in the oven. This should only take a few minutes

 

3. Once the butter has melted, break an egg into each dish

 

4. Pour a teaspoon of cream over each egg, spreading it around a bit

 

5. Season well with salt and black pepper

 

6. Cook in the oven for 6mins, or until the whites of the eggs are done

 

7. Serve while hot with toast and butter
