Elderflower Cordial

This recipe is one used regularly in our family, and in my opinion always tastes better than any shop-bought cordials. Instead of citric acid, it is possible to use more lemons. It was from my mother, via Mrs Aglionby, via Mrs Stratton. Makes 5-10 bottles 

Ingredients:

  • 20 fresh heads of elderflower picked preferably in the sun, although I doubt it makes that much difference 
  • 2 sliced lemons
  • 2 ounces citric acid
  • 3 pounds sugar
  • 1.5 litres boiling water
  • 2 crushed Camden tablets (from Boots?)

Method:

 

1. Place heads of elderflower, lemons, citric acid, sugar and water in a bowl

 

2. Stir until the sugar has dissolved and cover with a tea towel or similar

 

3. Leave to stand for 5 days, stirring twice daily

 

4. Strain

 

5. Add Camden tablets and bottle

 

6. Serve diluted according to taste (approximately cordial to water 1:10) with still or sparkling water. It will keep for one year. Leave longer if you like elderflower wine!
