Spiced Haddock Chowder

This recipe, originally from Nigel Slater's 'Dish of the day' had to be seriously adapted, when we got some haddock discounted one evening. I had watched the episode with this in, so had an idea of what on earth I was going to do with the fish, but hadn't quite anticipated the ingredients required for it. Here is my version. Serves 3.

Ingredients

  • 2 haddock fillets
  • approx. 600ml milk
  • 2 bay leaves
  • 8 black peppercorns
  • 1 onion, chopped
  • 25g butter
  • 2 carrots, roughly chopped
  • 3 potatoes, roughly chopped (or 1/2 swede, or a kohlrabi)
  • 1 tsp tumeric
  • 2 tbsp plain flour
  • some parsley, to garnish

Method:

1. Cut each hadock fillet into three and place in a pan with the milk, bay leaves and peppercorns 

 

2. Bring to the boil before leaving to infuse with the heat off and a lid on

 

3. Fry the onion on a low heat with the butter

 

4. Add to the onion the carrot and potatoes and fry with the tumeric until lightly browned 

 

5. Remove the haddock from the milk, set aside and reserve the milk

 

6. Coat the vegetables in the flour and cook for a couple of minutes in a pan

 

7. Pour the infused milk over the vegetables and stir continuously until you are left with a thick sauce

 

8. Cook until the vegetables are soft

 

9. Return the haddock to the pan to heat through before serving, topped with the parsley.
