At Christmas, we tend to have at least 2 small mince pies a day with a fair dollop of rum or brandy butter on each. This year we got some rum butter made with brown sugar from a friend, and found a similar recipe, having loved it so much. This recipe is from Genius Kitchen, but we usually do it to taste. Try a bit and add more of whatever you feel is necessary.

1. In a food processor, whizz up the butter and sugar until smooth
2. Mix in the rum and some spice
3. Keep tasting and adding more nutmeg or spice until you are happy!
4. Serve with mince pies or Cumberland rum nicky
