Although these little biscuits may not look as sophisticated as the name suggests, they are heavenly to eat (the raw mixture too!). The classic Christmas spices combined with the not-so-common (in
sweet biscuits, anyway) fiery black pepper are perfectly delicious. As moreish as flapjack but endlessly more exciting. The recipe is from Ruby Tandoh. Makes about 20 biscuits.
Ingredients:
-100g butter
-100g soft dark brown sugar
-2 tbsp golden syrup
-1/2 tsp ground cinnamon
-1/4 tsp mixed ground spice
-1/2 tsp ground ginger
-1/2 tsp ground black pepper
-120g rolled oats
-90g plain flour
Method:
1. Preheat the oven to 180 degrees Celsius
2. Heat together the butter, sugar and syrup on a medium heat until the butter has melted
3. Remove from heat and stir in spices before mixing in the oats and flour
4. Spoon small heaps of the mixture onto a lined baking tray and press down to form biscuit-sized discs
5. Bake for 10mins, leave to set on tray and then cool on a wire rack before serving
