Spiced Oat Thins

Although these little biscuits may not look as sophisticated as the name suggests, they are heavenly to eat (the raw mixture too!). The classic Christmas spices combined with the not-so-common (in sweet biscuits, anyway) fiery black pepper are perfectly delicious. As moreish as flapjack but endlessly more exciting. The recipe is from Ruby Tandoh. Makes about 20 biscuits.
Ingredients:
-100g butter
-100g soft dark brown sugar
-2 tbsp golden syrup
-1/2 tsp ground cinnamon 
-1/4 tsp mixed ground spice
-1/2 tsp ground ginger
-1/2 tsp ground black pepper
-120g rolled oats
-90g plain flour

Method:
1. Preheat the oven to 180 degrees Celsius

2. Heat together the butter, sugar and syrup on a medium heat until the butter has melted

3. Remove from heat and stir in spices before mixing in the oats and flour

4. Spoon small heaps of the mixture onto a lined baking tray and press down to form biscuit-sized discs

5. Bake for 10mins, leave to set on tray and then cool on a wire rack before serving
