Banana Bread

When typing up this recipe, I wasn't really very sure where to put it, given its misleading name. In the end, however, I concluded that really it IS a cake, looking and tasting like one, no matter what people try and call it! I find that it is the ideal way to use up those last few slightly dodgy bananas that no one really wants to eat, but you don't want to throw away. It is also great energy food, whether for my brother to take to school and eat before exams, or for the family to enjoy out walking and wild camping! The recipe is from BBC Food, called 'Fairtrade Banana Bread' but doesn't appear to display who it is from. 

Ingredients:

  • 225g self-raising flour
  • 100g butter
  • 150g caster sugar
  • 3-4 bananas (the softer the better!)
  • 1/2 tsp salt
  • 2 eggs
  • 175g mixed dried fruit

Method:

1. Preheat the oven to 180 degrees celsius

 

2. Peel and mash the bananas

 

3. Mix them together with all of the ingredients apart from the dried fruit, by hand or in a food processor

 

4. Fold the dried fruit into the smooth batter

 

5. Grease and flour a 1l loaf tin

 

 

6 Spoon the mixture into the tin and spread out evenly

 

7. Bake in the oven for 45 minutes to 1 and a half hours, until well risen and golden brown on top, and a skewer inserted into the middle comes out clean

 

8. Remove from the oven and serve spread with butter, or wrap up in clear film or tin foil to take on days out
