This is the perfect showstopper for a party, such as New Year or Christmas Eve, or a special birthday. The recipe is from Gordon Ramsay and is, I quote 'rich and sumptuous, but not heavy'. It is surprisingly light for something so indulgent and yet incredibly indulgent it is, especially with Mary Berry's dark chocolate sauce and meringues!

1. Grease a tin or silicone heat-proof mould and heat an oven to 160 degrees celsius
2. Melt the chocolate and leave to cool for 5 minutes
3. Stir in the egg yolks to the chocolate
4. Beat together the butter and 100g sugar until light and creamy
5. Stir the butter and sugar mixture into the chocolate mixture
6. Whisk the egg whites into stiff peaks
7. Whisk in the remaining 120g sugar a little at a time
8. Beat a third of the egg white mix into the chocolate and then fold in alternate spoonfuls of flour and egg white
9. Spoon into the tin / mould and bake for 40-45 minutes or until a skewer inserted comes out clean
10. Serve warm with cream, berries and chocolate sauce, if you like
