Brookies

These ingenious creations are the perfect bake sale idea. Save hundreds of customers the perpetual struggle between chocolate chip cookies, and brownies, by combining the two in this simple winner. Seriously, in a cake sale we had literally hundreds of cakes, and my brookies were the first item to get sold, and were sold out at the end. Also, I tried one and they tasted really good. I suppose you can make them with any chocolate chip cookie and brownie recipe you want (I substituted the brownie on the recipe with my Niki's Chocolate Cake and it worked) but here is what I used. Makes 24 slices. Recipe adapted from Melanie B, AllRecipes uk. Maybe try cooking the cookie base for a couple of minutes without the brownie.

Ingredients:

For the cookie layer:

  • 110g soft butter
  • 110g light brown sugar
  • 50g caster sugar
  • 1/2 tsp vanilla extract
  • 1 egg
  • 155g plain white flour
  • 1/2 tsp salt
  • 1/2 tsp bicarbonate of soda
  • 170g plain chocolate chips and multicoloured chocolate beans (eg Smarties)

For the Niki's Chocolate Cake:

  • 110g butter
  • 55g cocoa
  • 220g sugar
  • 2 eggs
  • 165g self raising flour

Method:

For the cookie:

1. Preheat the oven to 180 degrees celsius

 

2. Cream together the butter, both sugars and vanilla

 

3. Add egg and beat until light 

 

4. Stir flour, salt and bicarb gradually into the mixture

 

5. Stir in chocolate chips and press dough into a lined 20 by 30cm tin

 

For the Niki's Chocolate Cake:

1. Melt the butter in a saucepan

 

2. Stir in cocoa and sugar until dissolved

 

3. Remove from heat and add eggs

 

4. Spread over the cookie base

 

 

5. Cook in preheated oven until a skewer inserted into the middle comes out mostly clean

 

 

6. Leave to cool, cut and serve
