Chocolate Fudgy Slices

These are a wickedly tempting snack for any coffee morning, meeting or conference that you happen to require them for. The cake itself has a deep, gorgeous taste and the icing is creamy and delicious. The recipe is from Mary Berry's 'Aga Book'. Makes about 30 slices. If you wish to prepare these in advance, freeze before cutting.

Ingredients:

  • 50g cocoa
  • 6tbsp boiling water
  • 5 eggs
  • 250g soft butter
  • 250g caster sugar
  • 250g self raising flour
  • 3 tsp baking powder
  • 3tbsp milk
  • 225g apricot jam

For the icing:

  • 50g butter
  • 50g cocoa
  • 350g icing sugar, sieved
  • about 3tbsp milk

Method:

1. Preheat the oven to 180 degrees celsius

2. Measure the cocoa into a bowl and mix with boiling water to form a smooth paste

3.  Add in the remaining ingredients for the cake, apart from the jam

4. Beat until a smooth mixture

5. Spread evenly in the tin

6. Bake in the oven for about 30 mins, until springy and the edges shrink away from the sides

7. Leave to cool for a bit in the tin, before turning out onto a wire rack to cool completely

For the icing:

1. Melt the butter gently in a pan

2. Add the cocoa and stir well for a minute

3. Remove from heat, add the icing sugar and milk and mix well until smooth

4. Leave to set to a spreading consistency, before pouring and spreading evenly over the cake

5. Cut into about 30 pieces
