Niki's Chocolate Cake

This is one of my favourite traybakes; it is so gooey and chocolate-y and delicious. Whenever when for a tea or something, everyone always tries one and then keeps coming back for more and more! I would recommend cutting it into quite small slices and then watching as everyone comes back for seconds. 

Ingredients:

  • 4 ounces (110g) butter
  • 2 ounces (55g) cocoa
  • 8 ounces (220g) sugar
  • 2 eggs
  • 6 ounces (165g) self raising flour

Method:

 

1. Melt the butter in a saucepan 

 

2. Stir in cocoa and sugar until dissolved

 

3. Remove from heat and add eggs

 

4. Stir in flour

5. Cook in a greased baking tray for about 15 mins, but check after 12 mins. The cake should be slightly springy but still moist and gooey. Make sure you don't overcook it.

 

6. Cut while warm
